Guacamole

I always pay $2.25 extra to get guacamole in my burrito bowl at Chipotle. I love it.

I had a movie night the other day and decided to make guacamole as a movie-snack with some ingredients I had on-hand.  The previous night, I had bought a Trader Joe’s guacamole-kit (2 avocados, 1 lime, 1 jalapeno, 1 tomato, 1 onion, 3 cloves of garlic) and brought it over to my friend’s house for a late-night study snack, but it turned out to be more of an avocado ceviche instead of a guacamole since the avocados weren’t ripe and didn’t mush properly. (Sorry again akim!)

Notes:

1. Please make sure avocado is ripe…

2. You can of course add, (deep breath) cilantro… if you want, but I think it tastes fine without.

3. Please adjust salt according to your taste and how salty the chips are.  If your chips are super salty, your guac should be a little less salty.

Guacamole Recipe

2 ripe avocados, chopped roughly

1 juice of a lime, fresh

4 cloves of garlic, minced finely

1 onion, minced finely

1 tomato, chopped finely

2 jalapenos minced finely (add the seeds if you want it to be spicy)

1 tablespoon sriracha

1/2-3/4 teaspoon salt

Mix all ingredients together in a bowl and mash with a potato masher or fork. Enjoy with your favorite chips!
